Whether you like it with extra cockles, no Chinese sausage or with lashings of pork lard, char kway teow remains the much loved, worth queuing for, artery-clogging hawker favourite of Singaporean foodies.

Essentially a melange of rice and yellow noodles tossed in sweet dark sauce over fiery heat, the key to a good plate of char kway teow is the hawker's ability to control the fire and some fancy wok-frying skills.
